Ingredients:
- 20 cleared and gutted calamari (or calamari rings)
- 4 slices of toast bread
- 6 tomatoes (can be canned)
- 1 onion
- 80 g nuts
- 80 g raisins
- 80g sliced ham
- 80g bacon
- small bunch of parsley
- 3 tea spoons of marjoram
- salt, pepper
- oil
- 1 glass of milk
2. Remove a peel from tomatoes (if you don’t use caned tomatoes).
3. Dice tomatoes into small dices. Put into a bowl 2 of them. Keep the rest.
4. Dice onion into very small dices.
5. Dice bacon and ham the same.
6. Crush nuts and chop raisins into small pieces.
7. Drain off slices of brad.
8. Chop parsley.
9. Put all these ingredients into the bowl. Mix well. Sprinkle with salt and freshly ground pepper. Mix again.
10. Rinse calamari and dry well.
11. Put the stuffing into each calamari.
12. Take the rest of tomatoes and fry them in a frying pan.
13. Add half a glass of water, ¼ of glass of Chardonnay dry and some more nuts and raisins into the frying pan and mix.
14. Sprinkle with marjoram, salt and freshly ground pepper and simmer the sauce for app. 15 mins.
15.When the sauce is ready put calamari into it and simmer for 4-5 mins. Don`t exceed this time because than they will became ‘rubber’.
16. Serve with the sauce and basmati rice. You can decorate the rice with caviar.
You can also use calamari rings, but than you need to put the stuffing into rings and put each ring into flour, egg and breadcrumbs and fry in hot oil also 4-5 mins. Serve with sauce.
