Sirloin Steak Chateaubriand

From François-René de Chateaubriand`s surname. It`s classic sirloin steak. It`s cut from the middle loin (beef).

Ingredients:
  • 0,5 kg beef loin
  • freshly ground black pepper
  • salt
  • oil
Béarnaise sauce:
  • 5-6 shallot onions
  • 3 spoons of wine vinegar
  • 5 spoons of dry white wine
  • pinch of tarragon
  • 4 yolks
  • 250 g butter
  • 1 tea spoon of lemon juice
  • white pepper
  • salt
  1. Prepare the sauce first. Chop onions finely and boil in a small saucepan with vinegar, wine and tarragon app. 5 mins. until the volume of liquid diminish to 2/3.
  2. Strain the onion and pour the liquid into a saucepan again. Put the saucepan into bigger pan with boiling water (water bath). Add yolks gradually and whisk it so it won`t boil. Add butter gradually and whisk until sauce get denser. Add salt, white pepper and lemon juice. Keep worm until serving.
  3. Wash a loin, clean, dry and slice into quite thick slices. Fry on grill frying pan, on oil app. 5 min each side. Sprinkle with salt and pepper.
  4. Serve with the Béarnaise sauce.
