Ingredients:
- 1 onion
- 500 g grated carrots
- 1 bunch of coriander
- grated orange peel
- juice from 1 orange
- salt, sugar, cumin
- toast bread
- sweet paprika
- oil
- Chop onion and fry on a frying pan on oil.
- Add grated carrots and fry for 5 mins.
- Put into a bigger pan. Pour 600 ml (app. half a litre) of water. Add all, tied bunch of coriander and the orange peel. Cover and boil for 15 mins.
- Cool the pan in a sink with cold water. Take the coriander out from the pan. Pour orange juice. Blend and boil again.
- Add salt, sugar and cumin accordingly to your taste.
- Serve in bowls with coriander.
- Alternative serving with toasts with paprika.
