Carrot soup


Ingredients:
  • 1 onion
  • 500 g grated carrots
  • 1 bunch of coriander
  • grated orange peel
  • juice from 1 orange
  • salt, sugar, cumin
  • toast bread
  • sweet paprika
  • oil
  1. Chop onion and fry on a frying pan on oil.
  2. Add grated carrots and fry for 5 mins.
  3. Put into a bigger pan. Pour 600 ml (app. half a litre) of water. Add all, tied bunch of coriander and the orange peel. Cover and boil for 15 mins.
  4. Cool the pan in a sink with cold water. Take the coriander out from the pan. Pour orange juice. Blend and boil again.
  5. Add salt, sugar and cumin accordingly to your taste.
  6. Serve in bowls with coriander.
  7. Alternative serving with toasts with paprika.
