Green Curry Paste


Ingredients:

  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of coriander
  • 1/2 teaspoon of white pepper
  • 4-5 cloves of garlic
  • 1 thumb-size piece of ginger
  • 1 stalk of lemongrass
  • 1 shallot
  • 1-3 green chilies
  • 1 bunch of fresh coriander
  • 1 tablespoon of soya sauce
  • 1 teaspoon of shrimp paste
  • 2 tablespoons of lime juice
  • 3-4 tablespoons of coconut milk
  • 1 teaspoon of sugar

1.    Ground cumin and coriander. Slice all other ingredients.
2.    Put all ingredients in a food processor (or bowl and use blender).
3.    Blend well to get a green curry paste.
