Salmon in Orange Coat


Ingredients:
  • 600 g (21 oz) salmon fillet
  • 85 g (3,2 oz) breadcrumbs
  • 1 orange
  • 2 spoons of oil
  • fresh coriander
  • 1 small jar of mayonnaise
  • 1 egg
  1. Grate orange peal.
  2. Mix breadcrumbs with the orange peal.
  3. Chop few stalks of coriander and add to the breadcrumbs. Add oil and mix.
  4. Remove skin and fishbone from salmon. Sprinkle with salt and white pepper. Cut into pieces.
  5. Put tinfoil into an ovenproof bowl. Cover with oil slightly.
  6. Coat the fish in egg and breadcrumbs and put into the bowl. Bake 15-20 mins. in 180 Celsius d. (356 F d.)
  7. Serve with rice and sauce.
Sauce

Mix mayonnaise, fresh orange juice and few stalks of chopped coriander.
