Ingredients:
- 600 g (21 oz) salmon fillet
- 85 g (3,2 oz) breadcrumbs
- 1 orange
- 2 spoons of oil
- fresh coriander
- 1 small jar of mayonnaise
- 1 egg
- Grate orange peal.
- Mix breadcrumbs with the orange peal.
- Chop few stalks of coriander and add to the breadcrumbs. Add oil and mix.
- Remove skin and fishbone from salmon. Sprinkle with salt and white pepper. Cut into pieces.
- Put tinfoil into an ovenproof bowl. Cover with oil slightly.
- Coat the fish in egg and breadcrumbs and put into the bowl. Bake 15-20 mins. in 180 Celsius d. (356 F d.)
- Serve with rice and sauce.
Mix mayonnaise, fresh orange juice and few stalks of chopped coriander.
