Ingredients:
- 2 leeks (with green part)
- 6 tbsp olive oil
- 1/3 teaspoon curry
- 60 g pistachios without shells
- salt, pepper
- 0,5 kg salmon fillet
- basil
- Cut off green parts of leeks. Wash them and cut into stripes. You don`t need white parts, so you can keep them to cook sth else later.
- Pour olive oil on a frying pan and add leeks into cold oil. Fry on medium fire for about 10 minutes. Sprinkle with salt. Mix.
- Crush pistachios. Add half of them into the leeks. Sprinkle with salt, pepper, curry and mix.
- Pour water and bring to a boil in a separate pan Add slat.
- Slice salmon into app. 4-5 cm (1,6 – 1,9 inch) pieces.
- Put the salmon into boiling water and boil for about 6-8 mins.
- Put leeks on a plate to make ‘quilt’.
- Put the salmon on the leeks quilt and sprinkle with basil.
- Decorate the plate with curry and the rest of pistachios.
