Salmon on Leeks Quilt with Pistachio


Ingredients:
  • 2 leeks (with green part)
  • 6 tbsp olive oil
  • 1/3 teaspoon curry
  • 60 g pistachios without shells
  • salt, pepper
  • 0,5 kg salmon fillet
  • basil
  1. Cut off green parts of leeks. Wash them and cut into stripes. You don`t need white parts, so you can keep them to cook sth else later.
  2. Pour olive oil on a frying pan and add leeks into cold oil. Fry on medium fire for about 10 minutes. Sprinkle with salt. Mix.
  3. Crush pistachios. Add half of them into the leeks. Sprinkle with salt, pepper, curry and mix.
  4. Pour water and bring to a boil in a separate pan  Add slat.
  5. Slice salmon into app. 4-5 cm (1,6 – 1,9 inch) pieces.
  6. Put the salmon into boiling water and boil for about 6-8 mins.
  7. Put leeks on a plate to make ‘quilt’.
  8. Put the salmon on the leeks quilt and sprinkle with basil.
  9. Decorate the plate with curry and the rest of pistachios.
