Pork stew with dried plums


Ingredients:
  • 500 g (18 oz) pork spatula
  • 7-8 dried plums
  • 1/3 of glass of semisweet white wine
  • 3-4 table spoons of flour
  • 1 dice of beef consommé
  • 20 grains of green pepper
  • 4-5 grains of pimento (or allspice)
  • 2 bay leaves
  • black pepper
  • 3 table spoons of oil
  1. Cut plums into halves, put into wine and bring to the boil. Put aside.
  2. Wash meat, remove fat etc., dice, sprinkle with black pepper and cover in flour.
  3. Fry meat on oil until it browns.
  4. Bring half a litre of water to boil and dissolve consommé. Mix.
  5. Pour wine with plums into consommé add bay leaves, green pepper and pimento. Boil 3 mins.
  6. Pour ½-1 glass of consommé and put aside.
  7. Put meat into consommé and mix.
  8. Stew covered for 1 hour mixing occasionally.
  9. If stew is too dense, pour more consommé accordingly to your preferences and mix.
  10. Serve with smashed potatoes with nutmeg.
