Ingredients:
- 500 g (18 oz) pork spatula
- 7-8 dried plums
- 1/3 of glass of semisweet white wine
- 3-4 table spoons of flour
- 1 dice of beef consommé
- 20 grains of green pepper
- 4-5 grains of pimento (or allspice)
- 2 bay leaves
- black pepper
- 3 table spoons of oil
- Cut plums into halves, put into wine and bring to the boil. Put aside.
- Wash meat, remove fat etc., dice, sprinkle with black pepper and cover in flour.
- Fry meat on oil until it browns.
- Bring half a litre of water to boil and dissolve consommé. Mix.
- Pour wine with plums into consommé add bay leaves, green pepper and pimento. Boil 3 mins.
- Pour ½-1 glass of consommé and put aside.
- Put meat into consommé and mix.
- Stew covered for 1 hour mixing occasionally.
- If stew is too dense, pour more consommé accordingly to your preferences and mix.
- Serve with smashed potatoes with nutmeg.
